Homemade Tiramisu (Alcohol and Raw-Egg Free!)
Tiramisu is one of the world’s most beloved desserts. This timeless Italian classic is known for its layers of espresso-soaked biscuits, silky mascarpone cream, and delicate cocoa finish. When made well, tiramisu is all about balance, where each flavour complements the next without overpowering it.
Using Two Healths Alcohol-Free Vanilla Extract enhances this harmony, gently bringing together the richness of mascarpone, the depth of coffee, lightness of the whipped cream and the softness of cocoa.
This recipe is one that is free of raw egg, allowing it to be eaten by those who can't or shouldn't be eating raw eggs while staying true to the traditional dish. But don't worry - the lightness that the eggs bring is kept in this recipe through delicate whipping of the ingredients.
This halal-friendly, family-friendly recipe is very versatile. The quantity below makes a big tray, perfect for sharing at a dinner party. But a family-sized tiramisu can easily be made by halving all the ingredients below.
Ingredients
- 2 cups of coffee (I used 7 shots of Pablo&Rusty's Porter Street blend)
- 600 mL thickened/whipping cream
- 500 g mascarpone cheese
- 1 cup caster sugar
- 1 tablespoon Two Healths Alcohol-Free Vanilla Extract
- 400 g Lady Fingers (savoiardi biscuits)
- Cocoa powder for dusting
- Baking dish (mine is 23 x 30 cm but not very deep. You can easily use a smaller or larger dish without any issues)
Method
- Prepare your coffee and allow to cool completely (using hot coffee will make your lady fingers too soggy).
- Whip your thickened cream in a bowl, starting on a low speed. Once bubbles start to form, increase the speed. Whip until stiff peaks form (about 5 minutes).
- Place whipped cream in the fridge.
- Add mascarpone cheese, sugar, and vanilla extract in a bowl. Mix for several minutes until sugar has dissolved completely.
- Gently fold the mascarpone cheese mix into the whipped cream, adding a little bit at a time. Do this slowly to ensure that you don’t lose the air you’ve worked hard to incorporate.
- Dip the lady fingers into your coffee - a second is enough - then line your baking dish. You can cut the biscuits to help them fit into the dish.
- Top the first layer of biscuits with half of your whipped cream/mascarpone mix and smooth.
- Dip the remaining lady fingers into your coffee to create a second layer of biscuits.
- Top with the remaining cream and smooth. Use a paper towel to clean the edges of your dish. Cover with baking paper and then aluminium foil and place in the fridge overnight (or for several hours).
- Dust over with cocoa powder before serving.
