Gluten and Dairy Free Almond Crescent Biscuit Recipe

Two Health's Alcohol-Free Vanilla Extract is the perfect baking pal. It's a key ingredient in these easy almond crescent biscuits, which are a favourite among family, friends, and neighbours. They are naturally gluten free and dairy free. This makes these treats perfect for those with dietary restrictions or breastfeeding mums who have had to cut dairy from their diet due to baby's dairy allergy (been there done that!)

Featuring almonds, egg whites, sugar, and our premium Alcohol-Free Vanilla Extract, these cookies come together with a lovely crispy exterior and a soft chewy interior. Best of all, they taste even better the next day - so you can make these cookies a day in advance and store them in an airtight container until you need them. 

We find that these are the perfect biscuits for gifting around holiday seasons, as they look more complicated to make than they are, and the lovely smell of almonds and sugar entices everyone (even people who say they don't have a sweet tooth!). Since they're in a cute crescent shape, they're perfect for sharing around Ramadan! If you are giving them as a gift, we recommend using a disposable plate with a cute lace paper doily. Wrap with clear cellophane and tie with a pretty coloured ribbon.

They also make a great addition to your afternoon tea spread - pair with your favourite tea or coffee, and you have a treat that will instantly calm your nerves.

You can, of course, make these biscuits in a different shape - try rolling them into a little ball and then pressing down on the top slightly to create a flattened disc. You will still have a cookie that is scrumptious.

Ingredients
- 3 cups almond meal
- 1 cup caster sugar
- 1 tsp Two Healths Alcohol-Free Vanilla Extract
- 3 egg whites from large eggs
- 1 cup slivered almonds
- 1/3 cup icing sugar

Method
1. Mix almond meal, caster sugar and vanilla extract in a bowl.
2. Beat the egg whites until peaks form.
3. Gently fold egg whites into mixture until crumbly dough forms. Lightly squeeze the mixture together with your hands to form the dough.
4. Preheat your oven to 170C
5. Line a baking sheet with baking paper and pour slivered almonds onto plate.
6. Take 1 tbsp of dough (approximately) and roll into log. Press the log into slivered almonds to coat and then gently twist to form crescent shape. Add extra almonds if desired.
7. Bake in oven for 15-17 minutes until golden - but keep an eye on them. Every oven is different!
8. Remove from oven and allow to cool in tray for 5 minutes, then move to cooling rack to prevent the bottoms from becoming too brown. Allow to fully cool.
9. Dust over icing sugar.

This recipe makes approximately 20 biscuits. The Recipe can easily be doubled and tripled with no issue - making it super easy to use for gifts.
